My mother received some small baby gifts for my newborn from coworkers of hers that I have never heard of or met. Does proper etiquette dictate that they should receive handwritten thank yous from me?

Yes, etiquette is that you should respond to all gifts that you are given.
The note should be personal to the situation but length of the note is not required.
Since the gifts were passed to you through your mother, it may help to mention her in the note and also have your mom deliver the notes to her coworkers.

Of course you do. These people don’t know you and still took the time and spent their money to get you a gift for your baby. They did this because of their relationship with your mother. Not only would it be rude not to send them a thank you note, it would be insulting and embarrassing for your mother.
